Farmer’s Quiche
  • 3 cups hash browns
  • 1/3 cup butter, melted
  • 1 cup diced ham
  • ½ cup shredded cheese
  • ¼ cup diced green pepper, opt.
  • 2 eggs
  • ½ cup milk
  • ½ tsp. salt
  • ¼ tsp. pepper

Lay hash browns in pie plate as to make a crust. Drizzle with melted butter. Bake for 25 min. at 425 degrees. Layer ham, then cheese. Combine rest of ingredients and pour over top. Bake 350 for 25 -30 mins. Let stand for 10 minutes.


Apple Crisp
  • 5 to 6 apples, peeled and sliced
  • 2/3 cup packed brown sugar
  • 6 tbsp butter
  • 3/4 cup rolled oats
  • 1/2 cup flour
  • 1/2 tsp ground cinnamon

Layer apple slices in a 9 x 13 pan. Sprinkle with sugar and cinnamon. Mix sugar and butter together. Add oats, flour and cinnamon. Mix until crumbly. Sprinkle over apples. Bake at 375 degrees for about 40 minutes.


Baked Oatmeal
  • 2 eggs
  • 1/2 cup butter (melted)
  • 1 cup brown sugar
  • 2 tsp baking powder
  • 3 cup quick oatmeal
  • 1 tsp salt
  • 1 cup milk
  • 3/4 cup raisins (optional)
  • 1/2-cup nuts to taste (optional)
  • 1/4 cup chocolate chips (optional)

Mix together all ingredients in one bowl. Pour into 8×8 baking dish, and bake at 350 for 30 minutes or until golden brown. Serve alone or with milk or ice cream.
